    Mayan style pulled pork in an orange and achiote marinade. Served on a crispy corn tostada with refried black beans and topped with pickled red onion

  • Vegan Ceviche Tostada

    Chickpea ceviche with Pico de Gallo, Guajillo chiles and housemade chile vinegar.

Course 2

  • Sopa de Lima +1

    Traditional Mayan broth with chicken, sofrito and crispy corn tortilla strips

  • Sopa de Tortilla

    A classic Mexican soup with tomatoes and Guajillo chiles. Topped with feta cheese, sour cream, avocado and crispy tortilla strips

  • Fennel and Beet Salad

    Fresh mixed greens, roasted beets, seasonal fruit, fennel and roasted pumpkin seeds. Tossed with a fennel and citrus vinaigrette

  • Ash Rubbed Albacore Tuna +8

    Albacore Tuna seared with a chile ash rub. Served with silky butternut squash and poblano rajas. Topped with roasted pumpkin seeds and cilantro
